I bought some pig tongue from the local Asian T&T supermarket. Last time I froze the meat for at least a month, but is that really necessary?
Wild hog/pork I would freeze but grocery store bought I do think I would bother.

You dont need to freeze human-grade pork. So if the tongue was sold for human consumption, then you should be fine without freezing

Does anyone know a human who actually eats pork tongue??? LOL, I know what you mean about it being sold for human consumption, it is just one of those things that I know I would never eat.....

Haha....we eat sheep tongue souse here all the time! I love it! It took me a couple years to convince the hubby to try, then he loved it too. "Souse" is a broth based soup that's made with onion, potato and special spices and cooked for a good hour to develop the flavor. Great hangover cure! Chicken, pig feet and ox tail souse are also popular. It's served with lime and hot pepper, and a side of Johnny Cake ( local quick bread ) YUMMM!
